To make falafel, you will need to follow these steps:

  1. Soak the chickpeas overnight in a large bowl of water. Drain and rinse the chickpeas before using.

  2. In a food processor, pulse the chickpeas, onions, parsley, garlic, cumin, coriander, cinnamon, pepper, and salt until well combined. The mixture should be smooth but not too fine.

  3. Slowly add the flour to the mixture and pulse again until everything is well combined. The mixture should be thick and sticky.

  4. Form the mixture into small balls or patties. The size of the balls or patties is up to you, but they should be about 1-2 inches in diameter.

  5. Heat the vegetable oil in a deep-fryer or a large pot to 350°F. Carefully place the falafel balls or patties in the hot oil and fry for 2-3 minutes or until they are golden brown. Be sure to turn them occasionally so they cook evenly.

  6. Once they are done, remove the falafel from the oil and place them on a paper towel-lined plate to drain any excess oil.

  7. To serve, place the falafel in a pita bread and add your desired toppings such as tomatoes, cucumbers, lettuce, tahini sauce, and hot sauce.

  8. Enjoy your homemade falafel!
